ข่าอ่อน เป็นพืชเศรษฐกิจของตำบลห้วยขะยุง มีการ “ปลูกข่า”ทั้งข่าอ่อนและต้นพันธุ์ขาย เป็นอาชีพเสริมสร้างรายได้ ให้คนในชุมชน รองจากการทำไร่นามากว่า 20 ปี ข่าที่ปลูกเป็นพันธุ์ “ข่ากลาง”หรือที่ชาวบ้านเรียกว่า “ข่าแดง” เป็นพันธุ์ที่ปลูกง่ายแตกหน่อดี ให้ผลผลิตได้ตลอดทั้งปี ข่าอ่อนตำบลห้วยขะยุงได้พัฒนาคุณภาพจนได้รับการรับรองมาตรฐาน GAP ข่าปลอดสารพิษจากกรมวิชาการเกษตร กระทรวงเกษตรและสหกรณ์ตั้งแต่ปี 2547 จนถึงปัจจุบัน เป็นแหล่งเรียนรู้ ศึกษาดูงานและการถ่ายทำสารคดี โทรศัพท์ 0856116346,0830241256
